Weinbereitung | Secondary fermentation in the bottle with the ancestral method. A pied de cuve is made using the base wine, deliberately left with a slightly higher sugar content, in order to give the yeasts the necessary nourishment without the need to add sugars: the pied is then added to the mass just before going into bottling. In this way the second fermentation takes place inside the bottles, placed in rooms at a controlled temperature, without interruptions that could cause smells or defects. A period of refinement follows before being put on the market; the slight deposit on the bottom of the bottle contributes to the longevity of the wine, giving it greater complexity over time. |
