Terre Lariane IGT Rosso “Cresta Rossa” 2018 - Runch

The harvest of red grapes for our CRESTA ROSSA takes place when sample tests on the grapes give us the right data. Always manually we choose and in case we clean the impure bunches and place them in the boxes.

Once all the grapes have been harvested, we immediately take them to the cellar where the bunches will be de-stemmed and placed in the steel vat in controlled temperature. After that we inoculate the selected neutral yeasts and let the must and pomace ferment at a controlled temperature in the steel vat. The maceration of the marcs lasts about 12/15 days, in this period the cap of marcs is stirred at least twice a day. After maceration, we draw off the new wine, while the pomace undergoes a soft pressing and we transfer everything into the vat where it will be ready for malolactic fermentation for 5 months. Once finished we refine for 12 months in brand new barriques and then we are ready to bottle.

It will rest in the bottle for another 6 months before being ready to go into our glasses.
